Gluten Free Dutch Baby

4 eggs
1 cup milk or milk alternative such as almond milk
1 cup gluten free flour mix (I like Mama's Almond Blend!)
1/2 tsp. xanthan gum
2 tablespoons butter

Preheat oven and cast iron skillet to 425 degrees. Add ingredients to blender and blend until mixture forms a creamy yogurt like texture. Remove cast iron skillet from oven and add butter, coating bottom of skillet evenly. Lastly pour mixture from blender in to skillet and bake for 18-20 minutes.

Top with fresh squeezed lemon juice and powdered sugar... = amazing and cheap!
